Family-Run Balsamic Tour with Lunch – Castelfranco Emilia
Welcome to one of the few remaining vinegar cellars producing ONLY and EXCLUSIVELY Traditional Balsamic Vinegar of Modena D.O.P.
We offer a visit with explanation at the Antica Acetaia, followed by a rich tasting of our beloved product included in a real lunch.
You will be welcomed by Mario and Giorgio Gambigliani Zoccoli, who will present you the history of the family, of the farm, of the Traditional Balsamic Vinegar of Modena D.O.P. and its production techniques. You will continue with a visit to the Acetaia located in the attic of the Villa where some secrets about the tasting and gastronomic use of ABTM D.O.P. will be revealed to you.
At this point you will be ready for the rich tasting of ABTM combined with the products that have made Emilia-Romagna famous throughout the world.
Menu:
• 3 ages of Parmigiano Reggiano (18 months, 24 months and over 30 months)
• 2 types of ricotta (cow and sheep)
• 2 types of omelette with vegetables (courgettes, peppers and onion)
• 3 types of baked gnocco (with oil, with cheese and mushrooms, with cheese and ham)
• 8 types of cured meats (e.g. Prosciutto Crudo di Parma D.O.P., “Bologna” Mortadella, salami, cracklings, coppa, pancetta, coppa di testa, lardo)

We inform you that we offer a shuttle service leaving from Modena train station 30 minutes before the scheduled beginning of your visit. The service is completely free of charge but has limited availability, if you’re interested contact us at least 24 hours before your experience in order to secure a spot!

Our tour was one of the highlights of our trip. Nestled in their beautiful family estate, the family pride and love occupied every corner inside and out, all the way to the wonderful explanation and taste of their traditional balsamic vinegar. Marco, our guide was a gem and answered so many questions. The lunch that came with our tour was exceptional and they taught us which of the vinegars went best with which foods, and let’s not forget the wonderful Lambrusco that accompanied our meal. We couldn’t resist and brought back one of each bottle as they were absolutely exceptional.

What a great experience! We did the balsamic tasting experience and it was one of the highlights of the trip. It was interesting and informative to learn about how Balsamic vinegar is made and to see the “batteries” of barrels actually making the balsamic. The smell was amazing. The tasting exceeded our expectations. They provide wine and many different items to try with the balsamic (12 and 25 year old varieties). As an added bonus, we were able to meet the owner and his pregnant daughter. A true family operation where you are invited into their beautiful home for the experience. A great value and so fun! Had to get a couple bottles to take home with us.
